Peru is an exciting and often overlooked origin with very high altitudes and farming practices that are embracing sustainability. It is also the largerst organic certified producer in the world today. Most smallholder producers use a similar household-based model of production. Farm sizes are small. (source: sucafina.com)
Rigoberto Vazques comes from the 3rd generation of producers and he learned how to grow coffee from his father and grandfather. He is a member of JUMARP (2003), a cooperative which has 350 members, all from the farms in the Amazonas region of northern Peru. Their members focus on organic and fair trade coffee growing and reforestation of the Amazonas, building tree nurseries and fertilizing lands.
During the harvest season at finca Naranjillo, Rigoberto‘s coffee is selectively handpicked and hand-sorted to remove damaged and underripe cherries. After sorting, the cherry is pulped. Then the coffee is fermenting in a tank for up to 40h. Then it‘s spreaded on raised beds for 3 weeks where it‘s turned regularly to ensure even drying.
The coffee was sourced through Sucafina Specialty Europe and it got us excited on the cupping table as it is a versatile cup with a clean profile and dominant sweetness, making it suitable both for filter and espresso roasting. It‘s tea-like profile with chocolate and vanilla-like profile balancing the acidity made it quickly our favorite morning coffee.
