Aprocassi is based in San Ignacio, Cajamarca (1,700 MASL), where cloudy summers and long winters create ideal drying conditions for coffee. Grown in slightly acidic soils (pH ~5.5), varieties like Typica, Bourbon, Mundo Novo, Catuai, and Caturra, especially Caturra Amarillo, reach their full potential.
The project began in response to a planned 8,000-hectare mining operation by Sulliden. After environmental protests led by local families and the church, Reverend Humberto Tapia Días founded Aprocassi in 2000 as a sustainable, organic alternative. It became a cooperative in 2010. La Estrella is named after a nearby star-shaped lagoon.
