Oliverio Ñañez and his family have built La Correa around meticulous farming, continuous quality improvement, and a passion for growing distinctive coffee varieties. Together with his wife and children, he reinvests in education, infrastructure, and better processing, ensuring the farm continues to evolve despite the challenges of steep, landslide-prone hillsides in Bruselas.
Coffee cherries are hand-picked at peak ripeness before 36 hours of whole-cherry fermentation. After depulping, the coffee undergoes 30 hours of fermentation in mucilage, followed by slow drying for around 20 days under the region’s cool mountain climate, producing a clean, elegant cup with bright citrus, delicate florals, and balanced sweetness.
