The volcanic region of Bajawa on the island of Flores is one of Indonesia’s most fascinating coffee-growing areas. Arabica is cultivated on the slopes of three active volcanoes - Inerie, Wolobobo and Ebulobo - where mineral-rich volcanic soils contribute to the area’s distinctive 
sweetness and full-bodied character. Many farmers cultivate small plots within traditional tanah adat communal land, often surrounded by rainforest. Coffee grows alongside native vegetation with minimal intervention, allowing natural crosspollination and creating a remarkable diversity of coffee genetics.

The coffee is hand-harvested, with only ripe cherries selected. After depulping within a few hours of harvest, the coffee is fermented in water for 12–36 hours, depending on the microclimate, before being rinsed to remove the remaining mucilage.

Recommended rest period: 2–3 weeks from the roast date.
